Two pounds baby potatoes.
Five tablespoon of extra virgin olive oil.
Two cups chopped mushroom.
One cup chopped red onion.
One table spoon chopped fresh thyme and sage.
One pound ground beef.
One egg.
One cup tomatoes sauce.
One cup bread crumbs.
Half teaspoon salt.
Half teaspoon black pepper.
Half teaspoon dried red pepper.
One table spoon minced garlic.
Five ounces fresh spinach leaves.
Preparation
In a baking tray add one tablespoon olive oil to the baby potatoes .
Preheat the oven to 350 F and leave the baby potatoes to roast for 20 minutes .
In a pan add two tablespoon of olive oil,mushrooms,onion,thyme and sage then let it cook for about 5 minutes until the mushroom and onion turns medium brown.
Mix the ground beef with the mushroom and onion from step two then add half cup tomato sauce , bread crumbs, salt and pepper .
Mix it all together then shape it as a meat loaf .
Put the meatloaf on a baking tray then add the tomatoes sauce and red pepper slices on the top of the meatloaf . Bake it in 400 F oven for 15 minutes
